【Chick chow mein 鸡肉炒面】Ingredients
Serves 4
  • 3 garlic cloves, crushed 3个大蒜,切碎
  • good chunk fresh root ginger, grated 姜,切碎
  • 1 red chilli, deseeded and chopped 红辣椒,去籽,切块
  • soy sauce 酱油
  • tomato purèe 番茄汁
  • 2 chicken breasts, cut into chunky strips 2块鸡胸肉,切成鸡条
  • 3 blocks dried egg noodles 3包干鸡蛋面
  • ? a head broccoli, broken into florets 半颗西兰花
  • 3 carrots, cut into thin sticks 3跟胡萝卜,切成细条
  • vegetable oil 植物油
  • 300 g pack bean sprouts 300克绿豆芽
  • 3 spring onions, halved and sliced into long strips 3个洋葱,切半切成细长条
  • 1 tbsp oyster sauce 一勺耗油


Method
  1. Mix together the garlic, ginger, chilli, soy sauce and tomato purèe, then add the chicken and leave it to marinate while you prep the rest of the ingredients.
  2. 腌制鸡肉,把蒜,姜、辣椒、酱油、番茄汁和鸡肉,放置10分钟腌制 。

  3. Boil a large pan of water, add the noodles, broccoli and carrots, then cook for 4 mins before draining.
  4. 烧水下面,放入西兰花和胡萝卜,大概4分钟 。

  5. Heat the vegetable oil in a wok, tip in the chicken and its marinade, then stir-fry for 4-5 mins until cooked. Toss in the noodles, vegetables, beansprouts and spring onion to warm through, then mix the oyster sauce with 2 tbsp water and stir this in just before serving.
  6. 热锅倒油,翻炒鸡肉和酱汁,4到5分钟小火翻炒 。 把面倒入锅中一起,连同西兰花,胡萝卜,绿豆芽和洋葱一起翻炒,倒耗油和2烧水,大火翻炒一下,即可出锅 。
